CHICKEN BREASTS IN NAPOLITAN SAUCE

Ingredients:

FOR THE NAPOLITAN SAUCE:

  • 2 tablespoons olive oil
  • 1 small onion (minced)
  • 2 garlic cloves (minced)
  • 4 tomatoes (skinless, seeded, and chopped)
  • ½ cup chicken broth (liquid)
  • ¾ cup Low Fat Cream
  • Salt and pepper to taste)

FOR THE CHICKEN:

  • 2 chicken breasts (boneless and skinless)
  • Salt and pepper to taste)
  • 2 tablespoons olive oil

Preparation:

FOR THE NAPOLITAN SAUCE:
1. In a saucepan over medium heat, heat the olive oil and sauté the onion. When it turns translucent, add the garlic and cook for 1 to 2 more minutes.
2. Add the tomatoes, chicken broth and cream. Cook over medium heat for 25 minutes, stirring constantly. Season to taste. Remove from the heat and let it cool slightly. Blend everything and return to the pot. Heat the sauce and let it thicken a little.

FOR THE CHICKEN:
1. Season the chicken breasts to taste.
2. In a frying pan, heat the olive oil and cook the chicken on both sides, until it is completely cooked.
3. Serve the chicken and bathe it with the Napolitana Sauce. Then sprinkle mozzarella cheese over the sauce.
