PORK LOIN WITH PLUM SAUCE

Ingredients:
- 400 grams pork loin
- 1 cup of soy sauce
- 500 grams prunes
- 1 white onion
- 1 spoon of honey
- 500 grams sweet potato
- 90 grams unsalted butter
- ½ cup brown sugar
- 1 bunch of baby spinach
- 100 grams of bacon
Preparation:
For the Prune Sauce:
- Put the prunes in a pot,
- Add the soy sauce, onion, little bit of water, brown sugar, honey, salt and pepper.
- Cook over medium heat for 10 minutes. Mix in the blender perfectly. Reserve.
For the sweet potato puree:
1. Peel and cut in cubes the sweet potatoes.
- Put the sweet potatoes, water, butter and salt in a pot.
- Cook over low heat for 15 minutes. Blend and reserve.
Garrison:
- Chop the bacon and baby spinach, sauté them in a hot pan and set aside.
For the Pork Loin:
- SEASON the piece of pork and put on the grill, cook the pork perfectly and let it rest before cutting.
